Anna's Galaxy Cookies, Chunky Banana Bread Cookies and Summers End
Ingredients

Ingredients for Galaxy Cookies:

  • 1 cup unsalted butter
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 egg
  • 1/4 cup dutch cocoa
  • 1 2/3 cups of flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 cup rollos, chopped
  • 1/2 cup peanuts
  • 1/2 cup mini marshmallows
  • milk as needed
  • dutch cocoa for rolling
  • star sprinkles

Ingredients for Chunky Banana Bread Cookies

  • 1/2 cup nutella
  • 1/2 cup peanut butter
  • 1 tbs cinnamon
  • 2 bananas, chopped
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 1 egg
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 cup pretzel bites
  • 1/2 c sugar + 1 tsp connamon (for rolling)
  • One banana sliced

Ingredients for Summers End

  • 2/3 cup unsalted butter
  • 1 cup sugar
  • zest of two lemons and juice for one
  • 1 egg
  • 1 2/3 cups of flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Classic American Buttercream

  • 3 sticks unsalted butter
  • 6 cups powdered sugar
  • 1 tbs vanilla
  • milk as needed

Ingredients for Classic Sugar Cookies

  • 1 box unsalted butter
  • 2 cups sugar
  • 1 tbs vanilla
  • 2 eggs
  • 6 cups flour
  • 1 heaping tbs baking powder

Ingredients for Espresso Almond Buttercream

  • 3 sticks unsalted butter
  • 6 cups powdered sugar
  • 1/2 tbs almond extract
  • 1/2 tbs coffee extract
  • 1/2 tbs ground espresso
  • Milk as needed

Directions for Galaxy Cookies
1. Beat the butter, sugar, and vanilla together until fluffy
2. Add in your egg and vanilla until fully incorporated.
3. Add in the flour, baking soda, and salt and mix until a soft, fluffy dough comes together. Add in rolos, peanuts, and mini marshmallows. Stream in milk until dough reaches good consistency.
4. Scoop 1 inch balls, roll in dutch cocoa and place 2 in apart on a parchment lined cookie sheet. Bake at 350 for 10 min or until you can see crackles on top and edges are firm. Top with star sprinkles.

Directions for Chunky Banana Bread Cookies
1. Beat the Nutella, peanut butter, cinnamon, brown sugar together until fluffy
2. Add in your egg and vanilla until fully incorporated.
3. Add in the flour, baking soda, and salt and mix until a soft dough comes together. Add in the pretzel bits.
4. Scoop 1 inch balls and roll in cinnamon sugar mixture. Place 2 in apart on a parchment lined cookie sheet. Indent the center with your thumb and insert a banana slice. Bake at
350 for 12 min or until you can see crackles on top and edges are firm.

Directions for Summers End
1. Beat the butter, sugar, and lemon together until fluffy
2. Add in your egg until fully incorporated.
3. Add in the flour, baking soda, and salt and mix until a soft, fluffy dough comes together.
4. Scoop 1 inch balls and place 2 in apart on a parchment lined cookie sheet. Flatten slightly and bake at 350 for 10 min or until you can see crackles on top and edges are firm.

Directions for Classic American Butterscream
1. Cream the butter and vanilla extract in the bowl of a stand mixer.
2. Add in the powdered sugar and stream in milk until you reach desired
consistency.

Directions for Classic Sugar Cookies
In a stand mixer, whip the butter and sugar until fluffy. Mix in the egg and vanilla. Add in the flour and baking powder and mix well, kneading by hand if necessary. Roll ¼ in thick, cut, and bake at 350 for 10-15 min.

Directions for Espresso Almond Buttercream
1. Cream the butter, extracts, and espresso in the bowl of a stand mixer.
2. Add in the powdered sugar and stream in milk until you reach desired
consistency
