Anna's Gingerbread Cookies and Almond Cardamom Cookies

INGREDIENTS:
Gingerbread Cookies:
- 2 sticks butter
- 1 ½ cup sugar
- 1 ⅓ cup molasses
- 2 eggs
- 6 cups flour
- ½ tsp salt
- ½ tbs baking soda
- 1 ⅓ tbs ginger
- ⅔ tbs cinnamon
- ½ tsp nutmeg
- ½ tsp clove
Cardamom Almond Sugar Cookies:
- 1 box unsalted butter
- 2 cups sugar
- 1 tbs vanilla
- 2 tsp almond extract
- 2 eggs
- 6 cups flour
- 2 tsp caramom
- 1 heaping tbs baking powder
DIRECTIONS:
Gingerbread Cookies:
- In a stand mixer, whip the butter, sugar until fluffy.
- Add in the molasses and eggs.
- Add in all of the remaining dry ingredients and mix well.
- Wrap the dough in plastic and refrigerate until firm.
- Roll and cut, bake at 350°F for 15 minutes.
Cardamom Almond Sugar Cookies:
- In a stand mixer, whip the butter and sugar until fluffy.
- Mix in the egg, almond and vanilla extracts.
- Add in the flour, baking powder, and cardamom. Mix well, kneading by hand if necessary.
- Roll ¼ in thick, cut, and bake at 350°F for 10 to 15 min.
